Toffee Apple Cheesecake from Sainsburys Magazine October 2013 issue

Wow! What an amazing recipe from Jo Wheatley. I am not a fan of competitive cookery shows, but I do love good recipes. I decided to cook this for a birthday dinner for my father, so there were seven eager consumers who all enjoyed it (half-hearted praise from Jess my daughter who is not a fan of creamy puddings). I love seasonal recipes, and hate using out of season fruit and vegetables, so this was a good recipe for me. I was able to use cox apples from our own tree.

The best thing about this cheesecake is that it is not too sweet, probably helped by the base of gingernut biscuits. It also looks attractive and is so easy to make. In fact, I went out to buy the ingredients to make 2 more, to put in the freezer in advance for Paul’s birthday party.
