Truffled Egg Toast from Waitrose Magazine April 2013 issue

This was the second of three recipes on the front of this issue. Paul and I tried it for breakfast one morning. To be honest I thought it was over-rated. It is a recipe served at a Soho restaurant. My version probably did not look as neat as in the photo, as I used home-made slightly mis-shapen sourdough bread. We spent much time hunting for truffle oil, which curiously we could not find in Waitrose. I bought it in our Italian deli shop, and came to the conclusion that it is not an ingredient I’d normally bother with. It is very pungent and did not improve the recipe at all.
