In April the main picture on the cover of the magazine is of Pippa Middleton. Underneath there are three small pictures of food, so I thought that I had better make them all.

I love making pizza, and this recipe was just the kind that I like – no pineapple or sweetcorn in sight! Paul enjoyed it too, declaring the topping good and the base really crispy.

My only variation on the recipe is my own adaptation of any pizza involving mozarella. I find that it burns if left in the oven for too long, so I cook the pizza without the cheese, then just add the cheese and put it back in the oven for about 2 minutes.

I made this cake for Sunday afternoon rehearsal refreshments for my local operatic group. The cake was quite time-consuming to make and I am not personally keen on using artificial food colourings. I prefer to use squeezed fruit and jams for colouring cake and icings. On this occasion I decided to follow the advice of Sarah Cook and use a selection of rainbow colourings.

This was an excellent cake for feeding a large group of people, but to be honest I am not sure that I shall be making it again. My friends enjoyed it and thought that the fudgy texture was good. I found the texture not quite to my taste and the colours rather lurid.

This could be a good cake for a themed party.
